Ricotta-filled cookie sandwiches recipe

whatthefuckbenj asked me for the recipe of the cookie sandwiches I made the other day. I had actually thought of posting the recipe and took and couple of pictures of the process, but they are so ridiculously easy to make I don't even consider this a real recipe and was ashamed of even thinking about posting it. But since she asked, here you go.

I'm not sure about the weight and quantity, it depends on how many cookies you want to make.
