What's your price range? The place I stayed in the last time I was in Hamburg had pretty much all that you're looking for (I can't remember about the distance from the U-Bahn as I just walked everywhere) but it's a bit expensive now, since that was a couple of years ago :S We got upgraded to the highest room though 'cause I threw a wobbly over a lightbulb XD (i.e. I made myself look pathetic and put on a massive pout. Works a charm!).
