Ricotta-filled cookie sandwiches recipe

[livejournal.com profile] whatthefuckbenj asked me for the recipe of the cookie sandwiches I made the other day. I had actually thought of posting the recipe and took and couple of pictures of the process, but they are so ridiculously easy to make I don't even consider this a real recipe and was ashamed of even thinking about posting it. But since she asked, here you go.

I'm not sure about the weight and quantity, it depends on how many cookies you want to make.

Ricotta-filled cookie sandwiches

Ingredients:

- Plain cookies (I use Gran Turchese or Atene back home, but you can use any kind you want)
- Ricotta (I used about 450 gr (6 oz) to make 23 cookie sandwiches)
- Chocolate chips or grated chocolate
- Sugar (1 or 2 spoons)
- One lemon
- Coffee (cold)

Put the ricotta in a bowl and beat it with a fork. Add sugar and grated lemon peel. Quantity depends on personal taste, ricotta is already quite sweet, so I never use more than 1 or 2 spoons of sugar. Mix everything with the fork until it's smooth. Add chocolate chips or grated chocolate.



Pour the coffee on a plate (not a bowl) and place a cookie in it for a second or two, then turn it over and do the same to the other side. You have to be quick because you just want them to soften but not get soggy.



Place the cookie on a tray, put the filling on it and then another cookie on top and press down gently. Repeat with all cookies. You can keep them in the fridge for a few days - if you don't eat them first. :)

And that's it! Extremely easy. You can also make variations: for example, I didn't have a lemon but I had an orange, so I used grated orange peel and it tasted fine as well. Also, because I wasn't familiar with the cookies I was using and was afraid the bottom ones would stick to the tray, I only wet one side on them (the one facing upward), but as long as you don't soak them for too long, you should be fine.
