Well, cello is pronounced "sell-ou" in English, isn't it? You'd say "chello" in Italian, with the "ch" like in mmh... chess.
"Cello" is a loanword that has kept its original pronunciation, more or less, so we also say "chello".
Hehe, accents are fun. X)
